I dedicate this cookie to all my education cohorts who are exhausted at the end of each week from dealing with hormonal adolescents. I also dedicate it to anyone who needs Friday night to come, signaling the end of a long, tiring work week (TGIF!!!). This one’s for all of you!
Now, I know most people end the week with happy hour or a glass of wine or a tropical margarita. Me–I love me some chocolate. I need the sweet treat to reward myself for a week of hard work.
Okay, let’s be honest. I need that sweet treat reward nightly!
However, if I have an entire cake…or two dozen cupcakes…or a platter of cookies…or a container of espresso ice cream…chances are I will lose self control and eat it all within a matter of days. And then I’ll hate myself.
But this baby? This deep dish chocolate chip cookie for one? It solves that over-indulgence problem.
Then again, it creates another problem. It’s so easy to make. And it bakes up in one minute! Yes, you read that right: one minute…in the microwave.
So how does it taste? Kinda like a mix between a chocolate chip cookie and a cake. It has a slightly cake-like texture but a totally chocolate chip cookie flavor. Maybe it should be called the Deep-Dish Chocolate Chip Cookie Cake.
Whatever it’s called, you gotta try it. It’s fun. It hits the sweet treat spot. And best of all, it’s quick!
Deep-Dish Chocolate Chip Cookie for One
INGREDIENTS
- 1 tbsp. unsalted butter, softened
- 1 tbsp. granulated sugar
- 1 tbsp. packed light brown sugar
- 1 tbsp. egg, beaten (save the leftover and use it the following day to make another cookie)
- 1/8 tsp. vanilla extract
- 1/8 tsp. baking soda
- 1/8 tsp. kosher salt (use less if you use regular table salt)
- 2 1/2 tbsp. all-purpose flour
- 1 1/2 tbsp. chocolate chips
DIRECTIONS
- Place butter and both sugars into a small ramekin; mix with a spoon or fork until well combined.
- Add beaten egg, vanilla, baking soda, and salt; mix to combine.
- Add flour; mix until just combined.
- Stir in chocolate chips.
- Microwave for 60 seconds. Let cool slightly–cookie will continue to set in the hot ramekin.
